The oil, an ancient tradition

We are a young farm, located in an area particularly specialized in the farming of olive trees. We are young, but with an old history and tradition, at least since 1737, as engraved in the architrave of the farm-house, once used as sheepfold and farmers' house.

We have recovered centennial olive trees, neglected for a long time in order to obtain the best result from this ancient plant. The typical tuscan varieties we have are: frantoio, leccino and moraiolo.

We produce a small amount of extravirgin olive oil through a completely natural method: we do not use, indeed, any chemical compound, neither as fertilizer, nor for the treatment of the plants and of the grass.

The harvest of olives is done only by "brucatura", picking the fruits by hand directly from the tree, without leaving them to fall on the ground. The olives are then recovered in the best way for a short time and then delivered to the oil grinder.

Natural cultivation and production

We use traditional mill, with grindstone and a single cold pressing. The oil obtained is then bottled without filtering, to mantain all the nutritional and healthy properties of the fruit.

This kind of treatment, much more expensive and laborious than the industrial one, allows to obtain a very low acidity level: the medium value of the harvest 1999/2000 is 0.3%. EEC regulamentation considers olive oil extravirgin when the acidity degree is under 1%. In that way ours is excellent! The difference between our oil and the other extravirgin ones depends on our natural cultivation method and on the special taste, of course.

How to describe the aspect of our oil without tasting and seeing it? We can only try to do it.

The colour is yellow-green, veiled as it is not filtered. The taste is scented and persistent, with a smell of artichoke and a light bitter aroma. The almost spicy taste, "pizzichino" we call it, is typical of recent grinding. A rich flavour, a wonder!
